Knight was associate editor of the weekly paper of the Baptist General Convention of Texas and led editorial services for the Baptist Home Mission Board. His poem, "The Peacemaker," was quoted by President Jimmy Carter when the Israeli-Egyptian peace treaty was signed in 1979. In 1983, he and Bill Moyers helped found a publication called Baptists Today.
